The octopus, healthy and tasty
Recognizable at its round head and its eight long tentacles, this mollusc is an excellent alternative to fish, whose populations tend to decline.
The octopus (or octopus) is in fact full of taste and nutritional qualities. It constitutes an interesting source of protein: 29.8 g per 100 g of cooked flesh, against 13.5 g for the hard egg and 22 g for grilled salmon.
It also provides calcium and essential fatty acids to prevent cardiovascular disease. Another asset: this ace of camouflage has less heavy metals than the majority of fish because of its short lifespan (one to two years).

From June to the end of September, its capture is prohibited in certain Mediterranean areas (Calanques National Parks and Port-Cros, in particular) in order to allow females to take care of their laying, until hatching.
It is therefore better to favor the octopes caught in the pot or in the locker on the Atlantic facade. So that they are tender, place them for twenty-four hours in the freezer before cooking them in stew, on the plancha or jumped in parsley. 18 to 25 € per kilo.
Sea lettuce, anti -fatigue

This alga rich in chlorophyll abounds on our coasts in summer. Its green and flexible “leaves”, the taste of which evokes sorrel or artichoke, are real small bombs of energy. They contain ten times more vitamin C than orange and twelve times more iron than lenses!
Ideal for chasing fatigue and avoiding anemia. And as they also contain vitamine B12they represent a weapon of choice to counter deficiencies in the event of a vegan diet.
Their magnesium content is also remarkable: 2,790 mg/100 g of dehydrated algae, against only 250 mg/100 g for wheat germyet renowned in the matter. Sea lettuce can be enjoyed raw, salad or pesto. It is also succulent cooked, slipped into an omelet or a salty cake. Picked from April to December, Its red strips concentrates the riches of the ocean. They are well provided with vitamins and protein: 22 g/100 g, almost as much as meat! They are also well equipped with carotene and phycoerythrin, antioxidants whose anticancer virtues have been demonstrated.
