After several weeks of work, chef Romain Mahi and his wife Ayumi Sugiyama finally found their star restaurant, near the Stock Exchange, in Paris (IIE). If the accent room has been completely renovated, with a sublime concrete counter which waves from the entrance to the kitchens, which has not changed is the dishes … always as complicated to store! And for good reason. Here, The plates are nothing standard. They were imagined and shaped not far from there, one by one, in the couple’s apartment. “They are very artisanal, with irregular forms, and therefore difficult to stack,” laughs Romain Mahi.
